Home grown and eco-friendly in the District
The District has several restaurants that focus on serving only sustainable and organic foods. Back in the day you used to think organic or vegetarian food was only for hippies and girls with glasses. Things change. Now you have places like Poste Moderne Brasserie which focus on fresh, local ingredients.
Poste actually has its own vegetable garden and they grow their own spices! Viridian is another spot that focus solely on locally produced, seasonal and organic foods. And restaurants like Hook focus on local purveyors and their executive chef, Barton Seaver is an outspoken advocate of the sustainable seafood culinary movement. His restaurants, menus are printed in-house on 100% post-consumer recycled paper, wind energy credits are purchased to power the restaurant, and eco-friendly cleaning products are found throughout. These types of restaurants, though eco-friendly are still packed nightly and they are ahead of the curve in providing healthy culinary treats while protecting and preserving the environment. Unfortunately, Viridian was never able to break even and closed its doors in January.
