
New Executive Chef Andrew Markert is introducing seasonal tasting menus that will be served every Tuesday through Saturday exclusively at the chef’s counter at Tallula. Each menu, which will change frequently in order to utilize locally available ingredients, will be priced at $65 per person, or $90 with wine pairings, and guests are advised to make reservations in order to secure one of only six seats available for the exclusive experience.
The first five-course menu is Markert’s salute to the last of summer’s bounty, and displays his expertise in European cuisine as well as his preference for working with fresh, seasonal ingredients. Encompassing all the flavors of a “Summer Fling,” customers start slow with a tomato Gazpacho, cucumber ice, basil and black pepper crunch, and move on to a “Day at the Beach” or “Dinner and a Movie” with either a charred octopus clam bake or seared foie gras with blackberry gummies. As the evening progresses, diners can savor a rack of lamb on a bed of cauliflower couscous, before finally saying their goodbyes over a blueberry bundt cake with lemon cream and pop rocks.
