2941 Announces New Hires: Anthony Chavez Revamps Dessert Menu While Stefano Cappelli Takes Control of Wine Program

2941 Restaurant is pleased to announce the appointments of Anthony Chavez as Pastry Chef and Stefano Cappelli as Sommelier of the 180-seat, fine dining restaurant.

A 2001 graduate of the Culinary Institute of America, Anthony Chavez was tapped to serve as 2941’s head Pastry Chef, working closely with Executive Chef Bertrand Chemel to create French-inspired desserts that complement the restaurant’s elegant and seasonal savory creations. His new dessert menu includes such tantalizing creations as creamy hazelnut beignets with spring carrot–fennel pollen sorbet and carrot confit, and a chocolate quartet featuring an array of desserts using different percentages of cocoa mass: a 40% milk chocolate tarte, a 64% soft chocolate cake, a 66% chocolate creme and a 75% ice cream “truffle.”

Chef Chavez was most recently the Executive Pastry Chef at the Sofitel Chicago Water Tower where he managed a staff of five pastry cooks in a 415-room hotel and 10,000 square-foot banquet facility. Prior to the Sofitel, Chef Chavez worked his way up the ranks at the Ritz-Carlton Chicago, starting as a pastry cook and eventually achieving the title of the executive pastry chef after three years. Many of his creations were featured in Chicago’s most popular and widely read publications, including Chicago Magazine, Time Out and Chicago Social. Chef Chavez also completed several courses at the French Pastry School in Chicago, learning from such well-known chefs as Sebastien Cannone, John Kraus, Stephane Glacier and Emmanuel Ryon.

Stefano Cappelli now serves as 2941’s Head Sommelier and is responsible for the restaurant’s 5,000-bottle cellar and organized tasting events, in addition to providing staff training and growing his inventory. He received his Sommelier Diploma from the International Sommelier Guild in Arlington, Virginia and most recently served as the Beverage Manager and Wine Director at The Palm restaurant in Washington, DC.

Cappelli’s impressive resume also includes wine program manager positions at Café Milano and Filomena Restaurant, both located in the nation’s capital, and XO Wine Bar and Retail in his hometown of Florence, Italy. Cappelli is fluent in Italian, English and French and is currently working on mastering his next romance language: Spanish.
